Gemma's beetroot salad

Ingredients:
Beetroot
Carrot
Spring onions
Toasted coconut
Medjool dates, chopped.
Fresh coriander
Dressing - cider vinegar, olive oil, salt & pepper
Method:
Grate the carrot and beetroot. Add the chopped dates.
Sautée the spring onions, then toast the coconut and mix together.
Season with the cider vinegar dressing and garnish with fresh coriander
