Pickled Cucumbers




3/4 pint Cider Vinegar

4 oz. Sugar

1 tsp Turmeric

2 tsp Mustard seeds

1 Thinly sliced Onion



1. Slice cucumbers lengthways and place in a sterilised jar.

2. Salt for a couple of hours, then rinse.

3. Heat cider vinegar, sugar, turmeric, mustard seeds, and bring to the boil until the sugar has dissolved.

4. Allow to cool slightly and pour over cucumbers, then add sliced onions and dill.

Coriander seed also works well and can be added.
