Particularly tasty to spice up a winter salad.
1 tbsp salt
Peel the garlic
Boil the salt and 950ml of water, then add the garlic and continue to boil for 5 mins, then drain.
Fill small jars with the garlic, 1 bay leaf and 5 peppercorns.
Boil the vinegar and 120ml water and sugar until sugar has dissolved.
Pour mixture over garlic and immediately close and seal jars.
