Delicious added to a salad. Stuffed dried tomatoes in oil
Ingredients:
Tomatoes
Parsley
Garlic
Anchovy fillets
Fresh basil leaves
Oil
Method:
Cut tomatoes in half, and remove seeds.
Dry in a de-hydrator.
Stuff a little finely chopped parsley and garlic between the two halves. Add an anchovy fillet and a basil leaf.
Re-assemble the tomato and place in a jar. Cover with oil.
